The Sweetest Day to offer Classes.

If you watch cake shows and challenges on TV, you would think that fondant is the only icing that cake decorators are using these days! Contrary to popular belief, I have found that a large number of my customers still prefer buttercream icing for their wedding and special event cakes. I am now offering classes where I can pass on my 20+ years of decorating experience with buttercream icing and the tools needed to apply it.

Buttercream Bootcamp 2

This is the second in a series of classes where you will learn techniques and tips on how to create beautiful cakes iced in buttercream icing. In this class we will cover:
1. Embellished borders.
2. Swags.
3. Buttercream flowers (roses, mums, daffodils…)
4. Introduction of fondant decorations on buttercream cakes. You will learn how to make, color and attach fondant ribbons and bows.

The class will held Sept 12th from 2:00 pm – 5:00 pm at Two Rivers Mansion located at 3130 McGavock Pike, Nashville, Tn 37214. The cost for this group class will be $45.

This will be a fun hands on class. I hope to see you there. Class size will be limited to 20 students. To ensure you have a place in the class, please send your registration as soon as possible.

BUTTERCREAM BOOTCAMP 1 (Review)

If you attended Buttercream Bootcamp 1 and would like to refresh you memory and practice your skills I will be offering a Bootcamp 1 refresher class (90 min). This refresher class will be immediately before the Bootcamp 2 class (12:30 pm – 2:00 pm). The cost for this review will be $10.
In this class we will review:

1. Cake baking and leveling.
2. Filling and construction of your cake.
3. Crumb coat and finish icing of your cake.
4. Piping practice including shell borders and roses.

Bio:

I (Stephanie Felts) have been decorating cakes for 20 + years. During that time I have had the pleasure of being the cake designer and decorator for multiple caterers and eventually started my own business "The Sweetest Day". I have been a member of ICES cake society for over 15 years and have attended training sessions at their International conventions. I have also had the pleasure of training under some of the industries finest cake designers such as Mike McCarey, Roland Winbeckler, Nicholas Lodge, Earlene Moore, Geraldine Randelsone and Michelle Bommerito.
